During his time at a prestigious restaurant in Canada, he was allotted the opportunity to work with some of the world's top Michelin star chefs before embarking on a self-navigated eco-conscious cycling tour throughout Northern and Central Italy.Here, he developed bonds and partnerships with ethical wine producers, biodynamic farmers and hospitality leaders alike.
